MAIN DISHES
Attieke (cassava couscous) with fried tuna: Garba
Garba is a delicious Ivorian street food.
Ingredients for 2 people:
Cassava couscous
2 tuna steaks,
1 cup of flour,
1 teaspoon of salt,
1/2 teaspoon of black pepper,
1 onion,
2 habanero pepper (optional),
1 tomato (optional),
oil for frying.
1) In a frying pan add the oil and let it heat up.
2) Season the flour with salt and black pepper.
3) Thoroughly mix the fillet or the piece of tuna with flour.
4) Once the oil is hot, add the tuna and fry over medium heat until both sides are cooked through
and crispy on the outside.
5) reheat the cassava couscous (if frozen, thaw it overnight by leaving it in the refrigerator or do
it in the microwave). Make sure the granules detach from each other. Heat it with steam or
sprinkle with water, mix well and put in the microwave for about 3 minutes. If the granules are
soft, the attieke is ready. Otherwise, add water, mix well, and reheat for 3 minutes.
6) cut the vegetable as you wish.
7) Once everything is ready, put the attieke on a plate, add the frying oil, salt and mix well. Put
the vegetables on top (you can also add frying oil and salt to the vegetables), then the tuna on the
side.
